Ambrosia Borowski
Ambrosia Borowski is the founder of Chicago Cider Week and Director of Operations for Northman Cider Co. Passionate about education through inebriation, Ambrosia teaches spirits and cider courses in Chicago and loves to hold classes at the bar. They are the judge coordinator of the Great Lakes International Cider & Perry Competition, and recently published The Draught Cider Manual and Study Guide for the American Cider Association.
Stan Wash
Stan Wash is a founding member and cidermaker for Overgrown Orchard, an orchard-based cidery making wild fermented, bubbly ciders in Gary, Indiana. Stan cut his teeth in cidermaking by (a) reading every cider book he could find, and (b) attending every CiderCon® class he could. The American Cider Association’s certification program was a logical step in this education-driven approach to cidermaking. Becoming a Certified Pommelier™ was a way of investing in the safety, quality, and innovation at Overgrown Orchard, and has played a vital role in the ongoing evolution of that company.
