Yann Gilles

Yann Gilles, French Oenologist and Cidrologue, founded Malus & Vitis, a consultancy for cider and apple-spirit production, has 25 years’ experience in the cider industry. He judges international competitions and delivers technical conferences worldwide. With roots in Normandy, where he first encountered cider made by his grandparents, Yann holds degrees in agricultural and food engineering and oenology. In 2020, he launched his consultancy, partnering with cider producers to craft a variety of apple-based beverages and spirits. Prior to this venture, Yann served as scientific director at the French R&D Cider Institute (IFPC) for a decade, and before that spent over ten years consulting for 50 cideries while leading a team of oenologists dedicated to cider production.
